Spaghetti with Red Onion, Chilli Salami and Semi-dried Tomatoes
300gm thinly sliced hot Italian salami
200gm semi dried tomatoes in olive oil
I red onion thinly sliced
I packet of dried thin spaghetti
Salt and Pepper
Cook spaghetti according to packet directions. Add 2 tablespoons of olive oil from the semi dried tomatoes to a large frying pan and sauté onions until soft and starting to colour.
Once onions are cooked add tomatoes and salami and gently heat through, add drained pasta and toss together in pan, season with salt and pepper. Serve with fresh green salad dressed with the tomato oil.
